The leek has a long and fascinating history dating back to 2000 years before our era. Originally cultivated in what is now Iraq, leeks quickly found their way across the Mediterranean to Europe and eventually the rest of the world. This biennial herbaceous plant can grow up to 80 centimetres tall and differs from other onion vegetables in that it has leaves instead of a classic onion.
In Germany, leeks are available fresh from regional cultivation all year round. However, the main season runs from July to February, with different varieties on offer: Summer and winter leeks. While summer leeks are harvested in the warmer months and have more intense colors, winter leeks have a richer aroma and taste – ideal for hearty autumn dishes!
With its delicately spicy taste, which is characterized by its relationship to onions and garlic, leeks are extremely versatile. Everything from the root base to the green tip can be used. The white part is ideal for casseroles and quiches, while the green part has a wonderful flavor in soups and curries. Grilled to perfection or raw in salads, leeks are a real treat!
Leeks are not only tasty, they also have health benefits. It contains important vitamins of the B group as well as vitamins C, E and K. Rich in minerals and even inulin – a dietary fiber that has a positive effect on the intestinal flora – leeks have an activating effect on the metabolism.
When buying leeks, you should make sure that they are firm and deep green and have no discoloration. Leeks are best stored in a cool, dark and dry place in the vegetable compartment of the fridge. To protect the aromatic substances in the leek, it is advisable to store it in a freshness box.
